Treat yourself to a luxurious dinner at the Carambola Restaurant created
and prepared by Chef Charlie Statelman. Our Chef received his training
in French cuisine at the revered La Cote Basque restaurant in Manhattan.
As the banquet chef at New York’s Harvard Club, he prepared parties for
various elite clienteles. From there, he served as Chef de Cuisine at
March Restaurant for seven years, where he created intricate and
inspired menus using rare and interesting products. Chef Statelman
worked at Matthew Kenney’s Restaurant, and opened Madison Avenue’s
Caviar Russe as General Manager and Cuisine Consultant. Since 2002,
Statelman has been the executive chef at Patois Restaurant, the bistro
credited with initiating the dining renaissance of Smith Street in
Carroll Gardens, Brooklyn. Chef Charlie was Chef /Owner of Wombat at
Williamsburg and Cafe on Clinton on Brooklyn Heights.
The L'Mirador looks
out over the Blue Horizons natural Vieques landscape and the infinity of
the Caribbean sea. If you are out beach hopping all day you will want to
get back to the Inn for sunset cocktails with our excellent bartenders.
Walk just past the bar and you will find a granite pathway through the
garden and traveling palms. Up the wide terracotta steps on to several
landings that will lead you to the 1000 square foot L'Mirador. After the
sunset, romance sets in with shooting stars, the milky way comes alive…
seemingly a blanket of twinkling stars set high in the heavens holds
your gaze and embraces your spirit. Memories of times gone by awaken
within you.
